Christian and Frank Encalada blend their Peruvian roots with modern creativity, sharing family recipes and fresh daily ingredients to bring you a genuine fusion experience.

Although they had different visions, they shared the same objective: they were eager to achieve success. Christian discovered his passion for gastronomy. “I remember living alone and cooking every day. I watched all the cooking shows, I really enjoyed watching the preparations, and that’s how I learned until I decided to study Gastronomy in Peru.

The journey led me to be a part of several renowned restaurants in Peru, the United States, and Spain,” says Christian. Frank, considered by Christian as the “generator of new ideas and the most creative of all,” continued with his idea of starting his own company and prepared very well before taking on this challenge.

Nothing stopped them, and on September 12, 2011, they opened Divino Ceviche in Doral, and some time later, they also opened in Coral Gables. The goal was clear: to introduce Peruvian cuisine to every corner of the United States.

Richard joined Divino Ceviche as a strategic partner while he worked in aviation and lived in Japan. He stayed close to Frank and Christian as they built the brand’s creative vision and then helped launch “Ceviches by Divino,” their first concept for franchising. The Encalada brothers agree that trust and teamwork drive their success: Frank leads innovation and new recipes, Christian runs the kitchen and menu, and Richard oversees administration to keep everything running smoothly.

Frank believes a restaurant’s true pillar is its staff: when team members feel valued, they cook, serve, and care with genuine pride, resulting in delighted guests. To honor this principle, the Encalada Brothers created Ceviches with a Purpose, an NGO dedicated to supporting single mothers and their families. Through mentorship, workshops, and community grants, this program empowers participants, ensuring their well-being and reflecting the company’s commitment to people as its greatest asset.
